Claudio Sadler is one of the most famous chefs in Italy with secure competence and rational application of rules, but also with great creativity.His cuisine is creative and accurate, based on the traditions of classic regional Italian cuisine, reinvented from time to time according to his own personality and love for innovation. The same innovation can also be found in the equipment used in the kitchen, cutting-edge and constantly modernizing.


Sadler was one of the founders of the association "Jeunes Restaurateurs d'Europe". He was gastronomic consultant for several companies, including McDonald's and Autogrill, and for cuisine magazines. He was president of the Milanese restaurateurs and his restaurant voted in the prestigious guide of the association "Le Soste", of which since March 2012 he is president.


In 1982 he opened his first restaurant “Locanda Vecchia Pavia" in Pavia, and at the same time, during the summer, ran the restaurant “Vela Blu Portisco” on the Emerald Coast.
In 1986 he opened "Osteria di Porta Cicca," in Ripa di Porta Ticinese in Milan, where in 1991 was awarded his first Michelin star.
In 1995 the restaurant moved to via Troilo, again in the Navigli area in Milan where he remained for eleven years, and where he was awarded a second Michelin star (2002).
At the same time as managing the restaurant he devoted himself to teaching, and in 2002 he created " Q.B. centro di cucina enogastronomico " where with other reputed instructors he organized cooking classes for professionals and enthusiasts.

A banqueting company also bears his name, where it’s clear the "style Sadler" that rewards the Italian culture, simplicity and lightness. The Italian culture was brought by the chef to Japanese land in Tokyo, where he opened a restaurant Sadler. In 2008 Sadler arrived in Beijing in Tien'anmen square and opened his restaurant assisted by two capable staff.


After years of brilliant career Sadler moved to Via Ascanio Sforza 77, not far from the previous location.

His new restaurant opened in September 2007, joined by a second restaurant “Chic'n Quick – Trattoria Moderna”, for a more casual and fast dining, but always in the style of the great chef Sadler. For special occasions, Chic’n Quick accommodating banquets and events.

The year 2007 also saw the opening of two restaurants located at the new exhibition center in Rho Fiera (MI)
"Chic 'n Quick", and "Sadler in Fiera".

Another great achievement of Sadler was the publication of five major cookbooks, published by Giunti, which allow his fans to reproduce the preparations from his restaurants at home.
