What was once a small trattoria has become a gastronomic point of reference in Italy over the twenty-year period that Maurizio and Sandro Serva have been running  “La Trota” in Rivodutri, the restaurant their parents  opened over 50 years ago on the banks of a crystalline river. This great evolution was possible thanks to their decision to couple great food with an authentic and welcoming atmosphere, two elements which characterize their restaurant and give it a unique personality.

Today their award-winning cuisine is considered an oustanding expression of what can be done with freshwater fish. it is the only restaurant in Europe to earn two Michelin stars based on these fundamental elements. Chefs Maurizio and Sandro are invited around the world to lecture on freshwater fish at various events and have taught in some of Italy’s most prestigious cooking institutions: Alma di Guatiero Marchesi in Parma, Gamberorosso in Rome, and Tecka Formazione in Terni. The chefs are self-taught and work with passion and curiosity. They rely on local products from their territory and are respectful of tradition and research.
