Graziano Prest began his career in various hotels in Jesolo during summer breaks from school. In 1987 his great opportunity came under the tutelage of Enzo De Pra at his restaurant Dolada Pieve d'Alpago (One Michelin star), a
wonderful experience over two intense years punctuated by 2 short internships at al Pescatore di Canneto sull'Oglio and Gualtiero Marchesi in Milan, after which there was an interesting consultancy with the Restaurant Three Carnations Chirignago for about a year.

He was Head Chef at Malga Panna Moena from1991 to 1998, which received a Star in the Michelin Guide in 1993. At that time, inbetween seasons, he was able to add to his experience in France and had internships in major Italian restaurants (La Frasca di Castrocaro, Simphosium di Cartoceto, Vissani di Baschi, San Lorenzo di Puos D'Alpago). For two and a half years he was Executive Chef at Hotel Monaco & Grand Canal in Venice where the clientele was more international and required a new level of managerial and organizational competence. Prest felt a strong urge to go back to the mountains, and in December 2000 he began consulting work for the Hotel Cristallino D’Ampezzo in Cortina, where the prestigious clientele allowed him to create beautiful menus in a beautiful place. In 2002 he began a new chapter with his wife, Maridilia when they took over the management of Ristorante Tivoli in Cortina which is recognized by discerning restaurant guides as the best restaurant in Cortina, and the only one in Conca Ampezzana with a Michelin star. In April 2014 the couple bought the building the restaurant calls home.
